ABSTRACT
Internship is a big turning point for life. The internship process helps
students learn to accumulate work experience, to have a much more realistic
perspective than what was known in school or class. Moreover, the internship is
the time for students to consider whether they are suitable for this job or not. I
choose to practice in the hotel restaurant field because it helps me practice
communication and behavior skills as well as practice my patience. That is also
the reason why I choose a professional environment of Sunset Beach Resort and
Spa Phu Quoc.
This report is the process of working as an intern during nearly 2 months
here. Although the internship is not too long, it is enough for me to learn and
improve my skills. This report would include the internship process, experience
while working as well as learning, some of drawbacks and benefits in the
internship time and how to solve real situations when encountering them. Besides
that, in the final part of this report, I would suggest some ideas for the company
and the Faculty of Foreign Language at An Giang university to become better.

PART B: INTERNSHIP ACTIVITIES
Working at Soleil Fusion restaurant helps me learn a lot of new things as well as
soft skills through the activities here. Taking variety of roles at the restaurant
such as casher, hostess helps me have more experience. This part describes
activities that I have done and learned during my internship at Soleil Fusion
Restaurant.
I.
JOB INTRODUCTION:
At the beginning, after taking over my internship position. I was taken to the
restaurant and greeted everyone. Everyone at the restaurant is very friendly,
which makes me feel easy to get along with and relieves me of the pressure at the
first time. After that, my friends and I introduce ourselves (full name, hobby...)
one by one to the captain. Then the captain told us about the restaurant, guided
and assigned work to me.
I worked 8 hours a day like other staff and had one day off during the week. My
working timetable changed all the time:
- M6: from 6 a.m to 2 a.m
- M7: from 7 a.m to 3 a.m
- A2: from 2 a.m to 10 p.m
- A3: from 3 a.m to 11 p.m
M and A are just the names of my shift. M6 and M7 mean that the shifts start in
the morning and A2, A3 mean the shifts begin in the afternoon. I have to go to
the security room for timekeeping of each working session. There are different
activities between morning and afternoon.
In the morning, the restaurant had buffet service so at the beginning I had to
prepare for buffet such as dispensing beverages like juice, tea, coffee, milk and
wrote the name tags of dishes, then checked the utensils, tables and chairs to
ensure everything is good to welcome guests. In breakfast time, I always cleared
7
up the dirty plates on the table to ensure cleanliness for the customers and then
reset the table before changing to other one. During that time, I had to reset pretty
quickly to have enough tables for new customers. At 9:45 a.m. it is my duty to
notify to the customers that the buffet is running out. Then at 10 a.m I cleared up
dirty plates at the buffet counter and reset all of the tables including cutlery, add
sugar, salt, and pepper to the jar. After that, the next activities was wiping place
mat, stations and cutlery, washing and cleaning glasses, wiping dishes and taking
them out to the buffet counter. At 1 a.m I set up the table for A Lar-Cart in
European style with napkin, plate, glasses, butter knife. In addition, I cleaned up
dirty plates in the room at that time.
In the afternoon, I had to prepare some dishes and cutlery to set up on the
restaurant lawn to sell A Lar-cart. During that time, I am in this lawn to serve the
customers. At the end of the evening around 9 p.m, I began to clean up
everything at the lawn. After all, I had to reset for the buffet counter and checked
the utensils on the table to prepare for the next day.
Besides that, I have also been trained as a service professional with the following
service procedures:
_ Welcoming customers, invite them to the table (finding suitable table according
to their requirements)
_ Presenting Food, wine and beverage menu
_ Taking order
_ Unfolding the napkin on the customers’ laps (lady first)
_ Preparing the right utensils for the food and removing unnecessary utensils.
_ Serving beverages
_ Serving the food
_ Caring customers (Do you enjoy your meal?)
_ Ask if the customers would like to have for desert
8
_ Presenting the bill
_ Making farewell
It can be said that, Soleil Fusion Restaurant has given me an opportunity to take
on many different roles. Beside waitress, I am working as a hostess. Every
morning, I received a buffet customers list from main office. When the restaurant
opened, I had to open the door to welcome the guest with a warm attitude. After
that, I needed to ask the customers room number to check the list then I lead
customers to the table. After breakfast time, I needed to re-check the list to
calculate the number of people including adults and kids to create a bill for
breakfast buffet.
Moreover, I continued to be trained another job that is cashier. At the end of
every evening, I needed to use the computer to check all bills that are sold that
day and checked cash. After that, I had to write the date, the amount of cash and
my signature with the bill and the cash in the envelope then gave it to the
accountant. This job is pretty difficult to me because I am not good at calculating.
This is a weakness that I need to work on in the future.
II.
ADVANTAGES AND DISADVANTAGES:
1. ADVANTAGES:
The first advantage is my English background. I am student in English Language,
so I am able to communicate with foreigner customers. This is a good chance for
me to improve my speaking and listening skills. Moreover, there are a lot of
people from other countries in this place, so I could communicate with them and
have a chance to find out some different cultures such as Korean, Japanese,
American. Beside English, knowing little Chinese helps me more confidence in
taking care of the customers. I found that people from China was happy when I
tried to talk to them by their language and I also enhance my Chinese skills.
The next important advantages is that I have the best conditions during my
internship thanks to people in the company. They let me express myself and I had
9
the opportunity to put what I have learned into practice. So, I could deeping
understand my work in the future.
2. DISADVANTAGES:
Beside the above advantage, I have some disadvantages. Firstly, because the
customers come from different countries, their way of speaking English are
different way. Is it hard for me to understand and I am so confused at the first. I
try my best to find out how foreigners speak their English on the Internet and
learn. I also try to improve my listening and speaking skills.
In addition, in the process of working, I noticed that some practical things are
different from the theory. So, I was confused and had to ask the instructor. For
example, as a waiter at a restaurant I learned to take care of customers regularly
by communicating with them and asking them questions like "How do you feel
about the food?" "Do you have any travel plans yet?". But when I put it into
practice, I got frustrating responses and customer complaints. In that case, I try to
learn how to communicate effectively with customers through my instructor’s
help.
Furthermore, restaurant field is not my specialty so it sometimes confused me
with jobs in restaurants. In that case, I ask for everyone's help and take notes all
of new things to avoid forgetting my works.
III.
SOME SITUATIONS AND SOLVING PROBLEM
During nearly 2 months of practice, I have faced many situations that I am
surprised and feel difficult to deal with but I tried my best to resolve the issues.
*Situation 1: On the second day of working, I met a fastidious foreign guest. He
ordered an iced milk coffee and I brought it to him. After taking a sip, he called
me, looked annoyed and said that he does not like condensed milk, this is my
fault for not ordering carefully what kind of milk so I changed another drink for
him. This time, it was fresh milk and coffee as requested by him. But after
drinking, he still called me and angrily said that the drink was not as sweet as he
wanted. I apologized and changed another for him. In the end, he was satisfied.
10
After that, Mr. Hoa (the captain of the restaurant) told me that some foreign
customers would be very grumpy, so when ordering, I have to ask customers
carefully to avoid this situation from happening again. This is a big lesson for me.
*Situation 2: A guest order fried rice to eat at the restaurant. After 15 minutes, I
brought out the food but I could not find the customer anywhere. I was confused
and went looking for that guest. If I could not find that customer, I would be the
one to pay for this dish. Fortunately, the restaurant manager found this guest
sitting at the resort bar. He said that because he waited for so long, he went
sightseeing and sat here. I came and said, "Sorry for keeping you waiting. This is
your dish. Enjoy your meal". This was the situation that confused and scared me
the most because maybe I would have to pay compensation. The lesson I learned
is to observe customers and if I do something, ask others to observe for me.
IV. EXPERIENCE LEARNED FROM THE INTERNSHIP
During nearly 2 months of the internship there, I have learned a lot of valuable
experiences to help me look at myself and improve my knowledge and skills.
Firstly, I have a good environment to improve communication English skills in
this place. I have the opportunity to interact with many English speakers, improve
my English reflex. This is useful for me to enhance my English language.
Secondly, thanks to solving customer's complaints I have more bave when face to
the customers. Moreover, through the problem solving skills that I learned from
seniors in the restaurant, I have improved some important soft skills such as
communication skills, problem solving skills, team work skills. At the beginning,
I felt scared and confused when I encounter problems at work but I feel more
confident in the face of difficulties now. I can confidently deal with customers in
similar situations.
Thirdly, through the jobs I find that the importance of being proactive at work.
Jobs in the restaurant require me to actively work and learn from others. I learned
11
that people are not always willing to lead me, so I have to learn to observe and
follow everyone in the restaurant. It can be said that observing and actively
working are two important factors in every working environment. Furthermore,
patience also contributes to the success of the job. Dealing with guests everyday
helps me to be more patient and I know how to control my emotions which
makes me gradually complete myself.
Lastly, after a period of doing the internship, I noticed that it is very important to
know how to manage my schedule as well as my working time. This is the first
time I am under pressure because living and working time here is far more than
the time at school. This made me go to the restaurant to work in a state of fatigue
and ineffectiveness. After two weeks, I started to learn how to manage my time to
help me to be more productive in work as well as in my life.
Those are the important experiences and skills that I have gained through this
internship. Although it is not enough for me to be proud of myself, it will help
me to be more confident in finding a job for myself in the future.
V.
CONCLUSION
During nearly 2 months of the internship, I have basically completed all my
duties at the agency. This internship helps me more mature and more confident.
Not only I am able to practice soft skills but also I can learn useful new
knowledge that helps me feel easy to get the job in the future. Besides that, after
the internship, I also understand the advantages and disadvantages of the working
environment as well as learn how to adapt in the new environment. It can be said
that this internship plays an important role in my learning process in particular as
well as in my maturity in general.
VI.
SUGGESTIONS
FOR
RESORT
AND
SOLEIL
FUSION
RESTAURANT
The resort in general and the restaurant in particular are a good environment to
help interns bring into full play their abilities as well as create the best conditions
12
for students to practice effectively. However, in general, there are still some
limitations that need to be changed.
1. FOR RESORT:
- This is a place with a very beautiful sea view, but the resort has not yet invested
in decoration. If invested in beautifully decorated, it will attract more customers.
- Sunset Beach Resort and Spa should focus on better customer care and should
offer more services to satisfy customers as well as increase the reputation of the
resort.
- Besides, in order for the resort to develop more, leaders should take better care
of their employees. There should be remuneration for employees who work well
and enthusiastically.
2. FOR SOLEIL FUSION RESTAURANT:
- This restaurant has a large number of visitors but the restaurant is not staffed
enough so the customer service is still poor. Therefore, in order to improve
service quality for customers, the restaurant should hire more staff.
- In addition, the restaurant management department is not strict yet, so there are
internal situations that are difficult to solve, causing internal conflicts. So, the
restaurant needs to have a stricter management.
- The next important thing is that although it is a restaurant with Asian European style cuisine, the menu for Asian dishes is still few, so Vietnamese
customers have less choice. Therefore, the restaurant should add a menu of Asian
dishes for Vietnamese tourists to have more choices as well as to promote
Vietnamese cuisine to Western guests.
VII. SUGGESSTIONS FOR AGU AND FACULTY OF FOREIGN
LANGUAGES
- An Giang University should organize more internship for students so that
students can be exposed to real work.
13
- Besides, the school should introduce jobs to students in order to solve the job
needs of students and also improve the reputation of the school.
- And the Faculty of Foreign Languages should regularly care students during
their internship as well as focus on giving advices in case students need help. /.
