6cupshomemadeorlow-sodiumcannedchickenstock
1bayleaf
1teaspoonfennelseeds
1teaspooncorianderseeds
1teaspoonwholeblackpeppercorns
4ouncessaltporkorslabbacon,cutinto½-inchcubes
(optional)
3tablespoonsunsaltedbutter
1mediumonion,finelydiced(about1cup)
2mediumclovesgarlic,mincedorgratedona
Microplane(about2teaspoons)
1to2russet(baking)potatoes,peeledandcutinto½-inch
dice(about1½cups)
Koshersalt
2cupswholemilkorhalf-and-half
Freshlygroundblackpepper
Sugar(ifnecessary)

1. With a sharp knife, cut the kernels off the corn cobs.
Reservethecobs.Usethebackoftheknifetoscrapethe
“corn milk” from the corncobs into a large saucepan.
Breakthecobsinhalfandaddtothepan.Addthestock,
bay leaf, fennel seeds, coriander seeds, and peppercorns


and stir to combine. Bring to a boil over high heat, then
reduce to just below a simmer and let steep for 10
minutes.Strainthestockthroughafine-meshstrainerinto
abowl;discardthecobsandspices.
2. While the stock infuses, heat the pork, if using, and
butterina3-quartsaucepanovermedium-highheatuntil
thebuttermelts.Addtheonions,garlic,andcornkernels
andcook,stirringfrequently,untiltheporkhasrendered
its fat and the onions are softened, about 7 minutes.
Reducetheheatifbutterbeginstobrown.
3.Addthecornstock,potatoes,and1teaspoonsalt,bring
to a simmer, and simmer, stirring occasionally, until the
potatoesaretender,about10minutes.Addthemilkand
stir to combine. The chowder will look broken, with
melted butter floating on top. Use an immersion blender
toblendthesoupuntilthedesiredconsistencyisreached.
Alternatively, transfer half of the soup to a regular
blender and blend, starting on low speed and gradually
increasing to high, until smooth, about 1 minute, then
returntotheremainingsoupandstirwell.Seasontotaste
with salt, pepper, and sugar (with very fresh corn, sugar
should not be necessary). Serve immediately, sprinkled
withtheslicedscallions.
