3mediumclovesgarlic,finelyminced(about1
tablespoon)
2poundstrimmedskirtsteak(about1wholesteak),cut
crosswiseinto5-to6-inchpieces(seeherefortrimming
instructions)
1largeredbellpepper,stemmed,seeded,andcutintoẵinch-widestrips
1largeyellowbellpepper,stemmed,seeded,andcutinto
ẵ-inch-widestrips

12to16freshflourorcorntortillas,hot

Guacamole,sourcream,shreddedcheese,andsalsa,for
serving,ifdesired
1. Combine the soy sauce, lime juice, canola oil, brown
sugar,cumin,blackpepper,chilepowder,andgarlicina
medium bowl and whisk to combine.Transfer ½ cup of
the marinade to a large bowl and set aside. Place the
steaks in a gallon-sized zipper-lock bag and add the
remainingmarinade.Sealthebag,squeezingoutasmuch
air as possible. Massage the bag until the meat is fully
coated in marinade. Lay flat in the refrigerator, turning
everycoupleofhoursforatleast3hoursandupto10.
2.Whilethesteakmarinates,tossthepeppersandonionin
bowlwiththereserved½cupmarinade.Refrigerateuntil
readytouse.
3. When ready to cook, remove the steaks from the
marinade,wipeoffanyexcess,andtransferthesteaksto
alargeplate.Lightonechimneyfulofcharcoal.Whenall
the charcoal is lit and covered with gray ash, pour out
and arrange the coals on one side of the charcoal grate.
Setacookinggrateinplace,coverthegrill,andallowit
topreheatfor5minutes.Cleanandoilthegrillinggrate.
4.Placealargecast-ironskilletoverthecoolersideofthe
grill.Transferthesteakstothehotsideofthegrill.Cover
