Step1:LocatetheWishbone
This step takes placebefore you start cooking the
turkey.It’sevenmoreimportantwithaturkeythan
withachicken,makingyourcarvingjobatthetable
far easier. Start by pulling back the flap of skin at
the neck and finding the small Y-shaped bone that
runsalongthetopofbothbreasthalves.
Step2:FirstIncision
Makeyourfirstcutononesideofonebranchinthe
wishbone with the tip of a sharp boning, chef’s, or
paringknife.
Step3:TheOtherSide
Repeatontheothersideofthesamebranch,running
the tip of the knife along it. Repeat on the opposite
branch,making4incisionstotal.
Step4:PryitLoose
Grabthetopofthebonewithyourfingersoradry
kitchentowelandpryittowardyou.Itshouldcome
outwithjustabitofatug.Ifyouarehavingtrouble,
locatetheproblemspotsandusethetipofyourknife
toloosenitfurther.Oncetheboneisout,roastyour
turkey.
